Rising incomes tend to go hand in hand with growing appetites. In China the average milk consumption per capita has grown from two to six gallons a year since 2000. Unsurprisingly, the prices of food staples, which now have to compete with biofuels for inputs, have soared.
And though the growing profitability of dairy products may one day render farm subsidies obsolete, it is responsible for reports of cows being stolen from some dairy farms.
